I have a wood stove that has 2 black wires coming from the motor. Right now I have it wired to a 2 wire plug and it only runs on one speed. I had a switch in the wire the break the connection. Can I wire this using a fan control switch to adjust the blower speed? If so how?

If you get one compatible with that sort of motor, yes.
