I have a 100 year old building and am trying to update where possible...
The switch in the bathroom controls only the ceiling light and has 1 wire in and 1 wire out... Is there an easy way to re-wire to accommodate a switch/receptacle combo???

Only if your walls and ceiling are open.

Depends on what you mean by "wire". If you have two single conductors, then you don't have enough for a switch/receptacle combo. If you have two cable assemblies, each with multiple conductors, then you can probably do it.

If I disconnect the ceiling light, can I pull the old single load line from the switch to the light and replace it with 2 additional lines?

Not likely. The wire is probably fastened to the studs inside the walls.
