I'm trying to replace a fill valve. The existing one, the part where the supply connects, which passes through the tank, is metal, as is the nut which secures it to the tank - and what do you know it's siezed. It spins freely in the hole in the tank, but it will not budge when I hold it.

Any good ideas on how to remove it without destroying the tank?

Joules, Welcome to the DIY Forums.
You could try soaking with WD-40 and let it sit a while. Next thing would be one of those handles that holds a hacksaw blade. Not going to be fun job but at least it won't crack the tank with vibration as using a Saw-zall might. Good luck.

I guess I shoule have mentioned that: I tried spraying some liquid-wrench on it to no avail, though I can't see a way to spray it above the nut - so it would drip into it rather than off.

I was thinking of going at it with a dremel, do you think the vibrations would cause a problem?

Buy a socket wrench set for shower valves at the big box stores and you'll yank that nut right off.
