Are they worth the extra money? They are more than double the cost. I'm also seeing airtight trims. If I do get an airtight housing, do I need the airtight trim? If I get IC rated cans, are the airtight cans really necessary?

Where are you installing these, in a ceiling open to the attic or in the ceiling under a finished room? Are they required in your area? Some areas they are required by the local energy conservation codes.

They are worth it if and only if you live in an extreme climate (extreme heat, extreme cold, extreme humidity) and are installing them between finished space and an insulated attic.

I'm installing them in an area that an attic is above. I wouldn't say I live in an extreme climate, but it is in the Northeast(upstate NY)

If it is an unfinished attic, an IC fixture is what you want.
