I have a U shaped kitchen 9’x 11 ½’ with a window and sink on one 9 foot wall and cabinets and fridge on the other side. The 11-foot end has the range and a door. Right now, there is a single 3 bulb fixture in the center. I would like to remove that and replace it with can lighting. How many, where and what size would be good?

Personally - I believe that you can't have too much lighting in a kitchen. I like undercabinet lights for countertop work and lots of available candlewatts for general lighting.

Like zster, you can't have too much lighting in a kitchen. In addition to the under cabinet hockey pucks, you could install a total of 6 cans above it all, 3 on each 9' side, set in equidistant from the cabinet faces, probably 3' away and 3' apart, direct downlight. Use a switch for each application. You don't necessarily want the pucks on with the overhead cans just to get a drink of water.
