I was told that their is a new toilet out these that has a smaller outlet size and I think they said it has a grinder of sorts on it. Is there anything like that out there that will work on a 1" - 2" pipe?

Search for "Macerating Toilets" on any search engine. You will find the answer to your question which is yes BTW.
These toilets are full size to a holding tank directly behind the toilet, below the tank. There is a pump, in this tank, that will pump the toilet water and waste through a small pipe (3/4" to 1 1/4" depending on manufacturer) to a drain suitable for sewage.
