When using the same laminated material for the edge of the countertops, how much laminated material should be left at the bottom - 1/4 inch, 1/8 inch? I had new countertops installed and the raw edge of the laminted countertop is anywhere from 1/4 inch to almost 3/8 inch. Also, should the bottom edge be finished with a router?

I've had a lip as you've described in a couple of homes in the past. That lip, while providing good coverage for your countertop base, is just begging to be pulled off by accidental pulls on it. I prefer to router the laminate even with the bottom of the countertop baseboard.

thanks. I am afraid of it being pulled off.
