Help! I purchased a Mancesa V6000 pedestal sink and I can't find the directions for installation. My main question is how high above the floor should the sink hang/be bolted to the wall? I need to install the drywall on that wall, and don't know if the support board that is in there is at the right height.

I would place place your sink on the base, ensure that the sink is level - ALL directions.
Measure the distance from floor to the mounting holes.
That should do it so you know where the backer baord should go.
