We currently have a bath with no shower head. I was going to add a new fawsett head with a shower hose attachment and then hang the shower head on the wall. My question is that the current tile is only about shoulder high if you stand in the tub. Is this high enough? or should I add more rows of tile before adding the shower head? If so how high should it be?

I would add tile to at least 72 inches above the top lip of the bathtub.

Placing tile 72 inches above the tub lip of the tub would mean virtually to the ceiling!
Not a good suggestion, imho, unless you are desiring that but I would suggest tile to at least 60" - 66" above the tub lip.
The showerhead can be installed 76" - 86" from floor or in simpler terms approx 4 inches above the tile. Normally manufacturers suggest showerhead placement 72" - 78" from the floor. You can place the showerhead lower and go through the tile.

You may want to make sure the current tile is not set on drywall or set with mastic, both are horrible for shower applications.
