we are remodeling our kitchen and taking out the old tile but are not sure of the best way to remove the old backerboard. any suggestions of the easiest way to do it without damaging the subfloor below? thanks.

There is no easy way, start with a good pry bar and see how it goes. ;)

starting to tear out my tile tomorrow, how thick is the backerpoard underneath the tiles?

could be 1/4" - could be 1/2". Its likely set in thinset and has lots of screws holding int down. Its also possible of your lucky that who ever did the work used roofing nails instead of screws to secure the backerboard.
