I am about to paint my dining room a red/burgundy. I want the colour to have depth (like a well painted car that has 10 coats of paint). Is there any paint that gives this quality without putting 10 coats on or is there a technique that would give this effect?

Quality paint gives better coverage. 3 coats of a dark color is usually sufficent with good paint. Applying with good tools and with a good application technique are also important.

Apply a couple coats of polyurethane over the finish color, and it might achieve what you are looking for.
