After reading weather reports that the temps wouldn't drop below 40 degrees, I figured that I could still put caulk around the trim on an exterior door that I had been meaning to seal. Of course, the weather man was wrong and it got well below 32. It was about 45 degrees when I put the caulking up and the cold front came through about an hour later. The caulk was exterior window and door sealant (silicone-based, I believe). At present (a day later), it is still somewhat sticky. What happens to this stuff when it freezes? Will it eventually set up and be okay?

Yes, it will eventually be fine. Latex caulking stays soft for quite a while... the exterior may skim over, but it takes longer for the interior of the bead to cure. Provided it's not going to dip below 32F and stay there, it should be fine.
When temperatures drop below 32F, oil based caulk works best since it dries as the solvent evaporates and it's not affected by low temperatures.

Your caulk may never have seen the below 32 temps because of the location and the temperature of the trim.
Water freezes at 32 degrees, but that does not mean the caulk will because of the other ingedients in the caulk. It will just take a lot longer to cure.
