I've been wondering the same thing [using the anaglypta-type wallpaper], except we have plaster ceilings. Would it be hard for the wallpaper to stick to the ceiling like that or would gravity pull it down before it could set?

you won't have any problems if you properly prep the ceiling and use the right adhesive.
