I have an emilia gas oven which is probably about 6 years old. When I bake the bottom of the food turns to charcoal while the top remains raw! I have recently bought a thermometor and it is slightly hotter than the guage indicates - but I would think this would just burn the whole lot. I put the food in the middle of the oven. Any ideas???

Ideas? Yes. I have several. One of my areas of expertise.... :D
Most common cause is wrong pan or sheet pan, baking dish, etc. Most likely concentrating the heat to the bottom of the food or cake, etc which causes the food item to bake faster than the top.
Next possible cause is aluminum foil use on the rack or lower plate inside the ovens baking compartment. Use no foil anywhere. Have no other pan of any type under the pan with the food item.
Raise the rack or bake delicate items on the top rack farthest from the bottom as possible. I. E. Use the top rack close to the top.
Oven temp is too hot. Which may be cause by the thermostat or the temperature sensing element, which should be in it's holding palce and or in the two clips which hold it.
Slightly hot than it should be? Anymore than 20-25 degress is too much to hot. Temp should be within 10 degrees either way. Above or below set temp. May have to contact your local gas company, if natural gas, and have them calibrate the thermostat.
Some natural gas companies provide calibration service while others do not. Some do it free while others charge a fee. Call and inquire about an oven thermostat calibration.
