When wiring multiple cans, is it as simple as just jumping the corresponding wires
from fixture to fixture to fixture? Anything else special a do it yourselfer should know before starting?

If I understand you correctly, the answer is yes. There's lots of other stuff you should know, so read a couple of books on home wiring if you haven't done so already.
