I have a new triple gang box and am looking
at what options I have to put a switch plate cover on it.
There is 1 toggle switch and 2 oversized dimmer switches in the box.
What can I use as a switch plate (or plates?)

The easiest thing to do will be to replace the toggle switch with a "Decora" (square) style switch and get a three gang Decora cover. They're easy to find.
Alternately, you can have a custom plate made for the configuration you have now - about $20 at an electrical wholesale house.
