I don't really like the transition pieces stores sell for the wood flooring going to tile. I want to just put the grout right next to the wood for the transition. What should I watch out for when doing this so as to not let too much moisture warp the wood?

There are better ways to do that. Grout will eventually crack and crumble out.
If you don't want a trim covering the expansion gap you would be better off using a color matched grout caulk there. Looks just like grout, but it's flexible.

Foam backer rod, in the gap, and sanded grout matching caulking, found in the tile section of the big box stores.
