Hi,
I would like to install double glazing sliding aluminium doors for acoustic insulation (because of building construction near my home)
What would be a good choice for glass thickness (exterior, air interior)?

Use 1/8" x 3/16" glass for the two lites. Make sure that you have a maximum airspace between the two lites. Over 1" will make a difference...over two inches will make a great deal more of a difference.
If you can afford laminated glass as one of the lites, that will also make a huge difference.
But, all that said, it is very difficult to sound-proof a sliding door. By its very nature, a sliding door tends to admit quite a bit of sound. You will need to seal the door as tightly as you can along the edges to get any sort of relief from the unwanted sounds.
