My old (inoperative) under cabinet light was the type the plugs into a standard outlet. The new undercabinet light I just bought is designed to be hardwired. Can I cut the plug off of the old light and wire it to the hot and nuetral wires of the new light and just plug it in?

No. Doing it right won't be any harder than doing it wrong.
