Is there some type of lubricant that I can use on the stove knob shaft to make them turn easier?

Yes. The valves need to be oiled or greased. However, this isn't one of the jobs I would recommend the appliance owner does.
Without knowing the correct methods and safety precautions, this process can be hazardous.
Best solution is to contact the local gas utility company you buy from and request they lube those valves. Most service repair agencies will only replace the valves for liability reasons.
Caution: DO NOT USE WD-40. It will wash away any existing lube currently there and make matters worse!
