Does anyone know if you can screw into a Corian countertop? I have extensions that I want to install to have a two level countertop, although Im not sure if they can be mounted on Corian. anyone?

I'm by no means an expert on it or anything, but it seems to me that if you pre-drilled your mounting holes, and sealed them properly, then the only issue would be structural integrity (I'd want to have some sort of crossbeam support under the counter to have the screws go into, not just the countertop itself).
Someone please correct me if I'm wrong! :D

Don't try to drive screws directly into Corian or any solid surface. The constant pressure from the screw threads will eventually cause it to crack. If you're fastening to the surface start by locating a wood block on the reverse side held in place with silicone. Then drill through the Corian with a sharp twist drill which is larger than the screw which will go through. Stop drilling at the surface of the wood so the screw can be threaded into the wood through the Corian. It's best if the screw doesn't contact the wood.
