Im thinking anything strong enough to get the latex off will take the stain off your wood. You may want to strip down the finish on the wood and restain and seal. You could try mineral spirits on a rag and blot, but im thinking its going to hurt the stain.
Latex paint is funny...when its wet you can use water to clean it up. As it dries the water evaporates, changing it from a water based clean up to a solvent based. But once you can get it wet again with a solvent..most of the time water will again work.

If cabinet is unfinished and a latex paint splatter left the typical dried latex in graining, perhaps sanding will remove paint absorbed between wood grain. If planning on staining and finishing cabinet, any paint left in grain will not absorb wood stain. If problem is severe, an option is to paint the cabinet. If cabinet is finished with a surface finish, there are products, such as Goof Off, available to remove dried latex paint.
