When we bought our house 6 years ago, the Pergo floor in the kitchen looked great....but, due to heavy traffic and incorrect cleaning methods (I'm guessing...I have used many different products to clean the floors...oops :-) Well,it has lost its shine, and you can see many little scratches. Can I bring it back to life with some sanding and a few layers of poly? Thank you, for any advice!

No.
Laminate is not wood, it's a picture of wood with a protective coating on top.
I would contact Pergo and see if they recommend any cleaning products that might help restore the luster, and/or fix the scratches.
