I am new at this do it yourself stuff and I am wondering if I really need to paint over the primer I just put on. I am wanting a white ceiling and the primer I put on is white. What will the paint do that the primer doesn't do?

Yes. It will look better, last longer, and allow it to be cleaned if need be.
If not, down the road you will regret doing a half job.

Paint will also touch up better than primer. It will also age better [won't need repainting as soon]

I think you should be fine... how often does one clean their ceiling anyway? I've used bullseye 123 a couple of times... it dries to a nice satin-like finish. good luck.
