I'm installing a Kohler Portait whirlpool 60 by 32. My old bathtub was a 60 by 30.
Since the drain is now 2" over, what should I do to extend the plumbing? Also how do I keep the mortar base away for the pump when I am laying it? Need advice asap. Thanks

You will have to rework the drain from behind the unit, adjusting the trap might entail replacing the trap and extending the trap arm to do so. Not exactly a black and white answer.

Lay out a template of the bottom of the tub using paper, scribe it to the floor, use your hands with gloves on to dam up the mortar when the tub is set in level. This will have to be done from access from behind unit.
