I am considering purchasing a home with a "casita" that has a 1/2 bath on a concrete slab, and I am wondering if converting it to a full bath is a do it yourslef project? If so is there any links/sites that explain how to do this? If not, what should a good estimate be for cost if we stay to middle of the line fixtures?

You can use top-of-the-line fixtures (within reason) with little % impact on the budget. Labor is the big gorilla. You will of course have to knock out some slab to get a drain for a tub or shower in place. The proper connection for this drain and its vent need to be designed by a knowledgeable professional.

You didn't mention the size of this room. There are codes governing the clearance around a toilet, so you cannot "crowd in" a tub or shower in all cases.

There are any number of "how-to" books with general info on this type of remodel. They tend to lack some specifics, but are worth reading. Check at the HD, amazon, etc.
