i want to put a light with a light switch in my attic. could i do this off a nearby outlet?

Yes, as long as the receptacle is not in a kitchen, bathroom or laundry area, as long as the receptacle is not controlled by a switch, and as long as the circuit has sufficient excess capacity (which it almost certainly will as long as you don't want a ton of lights).
