I would like info on how to reattach our under mounted stainless steel sink to the Silestone (composite stone) countertop. What to use to remove old glue/epoxy? How long to allow surfaces to dry out? How to prep the surfaces? What to use as a new sealant? How to ensure pressure on the underside of the sink/lip to get a seal that will hold up for years?
Originally, I believe the sink was epoxied to the counter top before the counter top was laid on top of the cabinets. Within the first year the seal came loose. The sink is held into place loosely by the 1x2 pieces of wood screwed into the cabinet to support the sink. Water can splash into the small gap between the stainless steel sink lip and the underside of the countertop.

Use a sharp putty knife to remove the old epoxy.
Should be dry when you remove the epoxy.
Use the same product that was used before.
Cut boards and brace off from the bottom of
the cabinet to the bottom of sink for 24-48
hours.
Definitely put stringers back in on the sides
of cabinet for support. You cannot plunger
undermount sinks, ever.

I never like to epoxy a sink in place, although it is done often. If this is a kitchen sink, undermount bracket kits are available at any supply house, and this is the preferred method. Use caulking only to seal. I have seen silestone or granite drilled for sink mounting clips, nut Silestone may not recommend this or warrant against cracks. I won't try it.
