Should the copper pipe outside from the outside unit be insulated? It sweats like crazy which I know it should but does adding pipe insulation do anything good or bad?

Yes. Go ahead and insulate it with foam insulation. One purpose is that the suction line also cools the compressor and without it being insulated your picking up a lot of heat from the ambient air resulting in less cooling for the comp motor. You want it insulated inside so it dont drip water inside your home.
