someone kicked in the door to a double wide i own breaking out about a 8 inch long by 4 inch wide piece of the wood. I have taken off the trim and it looks like the remaining jamb is ok. Can i somehow cut out this damaged area and replace it without replacing the entire jamb?

You could, but it would not be secure at all, and there's no way to make a very nice cut across a jamb like that. You could certainly try it, but it would probably take less time to just replace the entire side of the jamb.
