I want to put wainscotting in my bathroom,
but the wall I want to put it on is uneven.
Can I put wainscotting on an uneven wall or do I need to put up new dry wall?

The details of your question are scant. That may be one of the reasons why you're not being inundated with responses. Uneven in which way: bowed studs top to bottom, wall is not straight, bad patch work, heavily textured, something has already been applied(?) and what does rerocking have to do
