how can i fix a door jamb that sits back about 1/8 on both sides of the wall? the trim rocks when i put it against the jamb and wall.

Build out the jams with thin moulding. very common occurance as plaster walls are thicker than drywalled walls. Then they are called extension jams.

Sounds like the door should have been installed flush on one side and have had a 1/4" extension jamb on the other.

If the door can't be moved, and the wall is only 1/8" past the jamb, that's not bad at all. The drywall edge that is making your trim "rock" back and forth just gets beat back with a hammer. Very common to do it that way.

beat back with a hammer- do you mean just pound on the drywall until it is smooth with the jam?

Do you mean "flush"? As in, the door should have been installed flush with one side of the wall?

Flush would mean the door should be "even with the wall surface... at the same level."
