Assuming units are sized properly, what is the opinion of the experts on this forum about the high efficient 2 speed heat pumps and air conditioner condensers when paired with variable speed blowers? Worth the extra cost? More effective in cooling and heating? Pros/Cons?

By "two speed" I presume you mean true two stage as opposed to those with just a two speed fan.
The only two stage I am at all familiar with uses the Bristol "Twin Single" compressor & I am not at all a fan of that compressor. A few years ago there were a few units which actually used two compressors, an expensive but effective way of doing two stage. Enough disclaimer... ;)

Unless the cost of energy is extremely high in a given area, I don't think the customer would ever recover the extra cost of purchasing such equipment given the normal life expectancy of a heat pump (±12 yrs.) or A/C (±16 yrs.).

Some of the best jobs and work the best when you look at power cost for the AC . Is a two stage set up for sure. A/S years back had a 5 ton unit .With a 2 and a 3 ton compressor in it 2 stage. Went to service a AC unit way back. Very large oil furnace looked like it had 2 AC coils in it went outside and it did have 2 2 ton high sides set up on 2 stage tstat. Asked about it said it worked just fine very large home later had some loads run on it they came back for 5 ton up to a 7 1/2 ton on it. The people said what they has worked just fine
After that have put many set ups for heat and AC Like that in restaurants Say you have a 10 ton load at the time used 2 electric furnaces and 2---5 ton coils and high sides tied the blowers together Did the duct work for the 10 ton. Put the AC on a 2 stage tstat. Everybody has been happy with the set up.
To me the V/S blower works just fine. BUT BUT the cost for a new motor and the controls you need for it is way out . Just to to high. Ill bet if you tell them how much it will cost to put a new fan motor in ,If one goes out. They wont buy it.
I think if you check Trane on a 4 ton19i has a 2 ton and a 4 ton compressor in it just one or the other run. Then there is a company over in TX that makes a split coil. That works off a 2 stage tstat and just one compressor. Dont know if I like it or not .
