I have a Kenmore gas range that I think needs a new thermostat. I took the range appart enough to get to the thermostat but there is one wire that goes to the back of the stove and then down in it. I am wondering if I should continue to disassemble to track this wire down to replace the part or is this job best left to a pro?

That wire you're referring to is likely to be the heat sensing element which is known as a capillary (cap) tube. If it is, it's not a wire at all. It's a hollow metal tube filled with an inert gas.
That tube extends down into the ovens baking compartment. It must be carefully pulled out. The new tube must be very carefully reinstalled exactly as the existing one is installed. Be careful installing the new cap tube. It cannot be kinked or bent.
The only difference between yourself as a do it yourself person and a pro is, the pro replaced hundreds of thermostats. You can replace the thermostat yourself if you proceed slowly and carefully.
I think needs a new thermostat
Just be sure the problem, whatever it is, is related to the thermostat and not some other part or cause. No problem description mentioned.
