Ny kitchen has eight can lights (on main floor or 2 story house) I have to replace all eight at least every 1-2 months. Average use, not left on all the time.
Any thoughts why?

What is the max watt rating of the fixture? What is wattage of the bulbs you are using? They heat could be causing premature failure.

60w and 60w. I am sure its a heat issue. Should I pull out the cans and see if there's insulation around them? Shouldnt be in an interior floor?

Start by keeping some detailed records. We've had several people here who, once they started keeping track, realized that they were not replacing bulbs as often as they thought they were.
I don't know of anybody who gets as much bulb life as they would like.
