I want to replace the flooring in the kitchen, I'm laying some of the click together laminate stuff.
Is it pretty safe to disconnect the stove so I can move it, and then reconnect it afterwards, obviously I would turn off the gas supply to the house first?
Is their any special precautions I should take when reconnecting it, to make sure it seals properly?

You may want to use a dab of light weight grease on the threads you are reconnecting, assuming this is a flex connector. If hard pipe use pipe dope and always use a soap solution to leak test. Do not use much soap in the water, too much will not always show leaks.
