What kind of surface is best for flat latex finish?
And one more thing
I'm about to texture spray adjacent wall. Should i mask off? use a shield? direct spray away from the surface?

Flat latex works well on most surfaces. Use it when you don't want a sheen. Flat won't highlight defects in the surface like a glossier finish will but won't be as scrubable as an enamel.
If you intend to texture just 1 wall, mask off everything you don't want textured. If you are going to repaint entire room, you can use a shield and clean up anything that gets on the other surfaces. You decide which would be easiest. :)
directing the spray would result in light texture @ the edges. wouldn't be uniform.
