I have plaster walls that has a heavy texture on them. I want to put drywall over the plaster and make my wall smooth. What would be the best way to hang the drywall, with screws or adhesive?

I'd suggest using both, the screws should be long enough to penetrate into the studs, not just the lath. You can also look for drywall supply house in your area there you will be able to purchase what are called gyp screws, they have a thicker shaft than regular drywall screws and will bite and hold into the plaster, but as I say the sheetrock must be attach into the studs for proper holding. If you haven't removed the trim around the doors and windows, you might also think about getting vinly edge bead to run on the drywall where it butts to the trim.
