Yummy - nothing better than home grown carrots!! There are several ways to store them including "in the ground right where they grew". I don't have enough space here to describe each method but there are several good sources in directions.

Ortho put out a book called "A guide to preserving food for a 12 MONTHS HARVEST" c. 1975. It's 25 yrs. old now but I still refer to my own copy. A carrot is a carrot and some things don't change with time. Ask your local library to get a copy through inter-library loan if they don't have one on the shelf. There are several entries. You may be particularly interested in pp. 13-23 but do look through the entire book.

Another good book to check out is Stocking Up III by Carol Hupping. Great info and some dog-gone good recipes too.

For information geared specifically to your climate the best resource you have is your local Cooperative Extension Service. They are listed in the government section of your phone book under county probably headed by the initials for your state land grant university/college. They can send you complete instructions for in-ground, under-ground, and/or above-ground storage whichever works for your situation. Ummmm! Enjoy those carrots.
