We are remodeling our kitchen and a good quantity of plaster came off when we removed our countertop. In addition, an earlier repair above the sink resulted in the removal of the wood lath and a poor repair job measuring approximately 2 x 2 ft. My question: what is the best way to repair this stuff? We were told to install drywall over the larger hole and then finish with plaster. Also, were told to just use patching plaster to repair the damage from the countertop removal.

Patching with drywall is almost always the easiest way to go. If the drywall is just recessed a little from the existing wall it is not that hard to build it up and blend it in with the plaster. If you are recoating plaster, make sure the surface is sound. If it is dusty you need to prime it so you will have a sound surface for your patching to adhere to.
