 Hi all,
I own a massive coffee table that is hardwood, with the exception of the top of the table. I have kids, and that means I have significant dings in the table top.
I sanded the top, and put a layer of polyurethane on it. The results were darker than before, and uneven in color.
I do not know how to replace veneer. I love this table, and want to keep it.
Suggestions?

I suggest that you strip the top, stain it the desired color, and finish it.
Hope this helps.

Is there any difference in technique staining veneer vs. solid wood?

Nope, no difference
It might need to be "wiped" more
But not really a different technique or anything
