What should be the minimum ceiling height before hanging a pot rack from the ceiling?

You don't want the pots to hang lower than the standard height of lights that would go over an island. No more than about 68" off of the floor or 32" off the the countertop.
If you hang the pots too low, people won't be able to see from one side to another.
