We are wanting to replace our bedroom closet doors with either Mirrored or Wood bi-pass doors. They are currently old pine and if we went with wood doors and not mirrors we want oak 6 panel or flat panel. The problem we are faced with is that the opening inside the jam is 63 1/2 inches. Everything that I have found to replace these are either 30" doors which doesn't give us enough to fill the space when closed or 36" which gives us too little room to work when they are both slid one direction. Are there any companies that custom make doors to fit this size? Ideally if we could get 32" doors that would fit the space perfectly.

You could check with the lumber yards in your town to see which one has a door shop. Whatever you wanted could be easily made there. Some of the home improvement stores may be able to order whatever you want.
