I am covering over a brick fireplace using 4"x4" stone tile. I can either not cut the tile around the fireplace opening which leaves a clean look but a 1" overhang beyond the brick which will be covered by the fireplace doors or cut the tiles so they are flush with the brick. Is there any reason why I should cut the tiles?

I would keep the clean look IF there was a way to support the tile with thin-set. If not the tile would look far worse broken and cracked then cut flush with the brick. Overhanging tile is an accident waiting to happen.
