Should trim work be painted before or after installing? And also what is the best type of paint for a bathroom setting to deal with the moisture?

"That is the question"
All trim, whether painted or stained/finished should always be done before installation.
Follow up pin holes with a putty stick or spackle and paint.

Agreed.
Regarding the type of paint, semi-gloss latex works well since it can be washed, and it will resist bathroom condensation the best.

For some reason I was thinking about walls when I wrote the reply about semi-gloss. For trim, use a paint specifically for trim. Personally, I prefer high-gloss trim paints because they wipe clean and stay dust free better, in my opinion.
