I have refinished a maple table with Varathane Danish Oil. Can I apply any type of finish over this to enhance the color/shine? If yes, how long should I allow the table to dry before applying a finish?

Usually, 24 hours at the correct temperature and humidity are sufficient for another coat. Be sure to check the recommendations given by the manufacturer on the product's label. Varathane makes a wipe on gloss finish, if you want more shine than the danish oil provides.
