My exterior door needs a new piece to the door jamb. The part that the door latches (the piece behind the piece of trim) is broken. Is there a way that I can only replace that peice or do I need to replace the door?

Is this an old original door? Or a door with an aluminum threshold?

You can replace just the latch side of the jamb, or, with lots of patience, replace just the broken portion of the latch side jamb, or, depending on exactly how the jamb is broken, you may be able to remove the casing and REPAIR the jamb by glueing the crack, pre-drilling and counter sinking 2" sheetrock screws into the edge of the jamb, then replacing the casing.
