Any ideas on how to recreate the effect of a starry night sky for my home theater ceiling? This project has not started yet. (I do not want to use a projector type setup for this if possible.)

You could try to look for a system that uses fiber optic cables. There is one central lamp and many fibers that run to where you want the lights (stars) to be.

A google of 'fiber optic stars' will bring up lots more. Some of them use LEDs I think.
