I took off the tile from my kitchen countertop backsplash and of course a few peices of the wall came out. Do I just run a utility knife around where I want to replace the drywall and cut to fit a piece before I re-tile the backsplash?

Yes, that should work fine. You might want to pre fill any large cracks before you set your tile.

You might consider using green board if you are in a wet spot. A wet spot is anywhere that you expect that water or moisture may come in contact with the sheetrock. :cool:
