I'm currently insulating the walls of my new shed-workshop. I had all the insulation installed and half of the 6mm plastic vapor barrier when the thought crossed my mind "Instead of using this 6mm plastic, could I have used the Tyvek I had left over from sheathing the exterior before installing the siding?" I suspect that's not a good idea but maybe someone will know for sure. Thanks.

Tyvek is designed to allow moisture to pass thru it from the wall cavity to the outside, which will help prevent mold from forming inside the wall. I wouldn't recommend using this for a vapor barrier on interior wall.
